Mystic Oysters

Peconic Pearls

Mystic Oysters are grown by Connecticut members of the Noank Aquaculture Co-Op in the clean waters of Fishers Island Sound just south of Mystic, Connecticut.  Our goal is to grow the healthiest, prettiest, and most uniform product possible.  To that end we currently produce some of the finest Virginica product on the planet.

Mystic Oysters have a distinctively “round” shape and their raised “ribs” give them a lovely scalloped appearance.

   Mystic Oysters tend to run on that larger side.  A typical 100-count bag contains oysters that average 3 to 4 inches in length.

  Mystic Oysters have hard shells that resist crumbling, a common problem with farm-raised oysters. 

     Mystic Oysters are grown locally here in New England and come direct to you from the grower. 

 

    The meat in a Mystic Oyster is plump, creamy, and fills the cup.  The flavor tends toward the sweet side with average salinity and a mild metallic finish.
